Recipe #2 Chicken Pizza Packets!

We love this recipe and its fun for the kids to help dump everything together. It was put together so you could make individule little packets and cook them on the grill but since we don't have one we make it in the oven.

CHICKEN PIZZA PACKETS
1 lb. boneless skinless chicken breasts, cut into pieces
2 TBS. olive or veg. oil
1 small zucchini, thinly sliced
16 pepperoni slices
1 small green pepper, julienned
1 small onion, sliced
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1 c. halved cherry tomatoes
1/2 c. shredded mozzarella cheese
1/2 c. shredded parmesan cheese

Pre-heat oven to 350. In a large bowl, combine the first 11 ingredients. pour into baking dish and cover. Put into oven for about 35 to 40 min. Until chicken is cooked. Carefully open the dish and sprinkle with tomatoes and cheese. Put back into oven just until the cheese is melted. If you want to cook them on the grill follow the recipe the same, just spray foil with pam and toss on the grill! Enjoy:)

Today You Are You'er Than You

Tonight when I went upstairs to check on the kids this is what I found in the hall! She did her hair all by herself and I am sure would be willing to help you with yours!

Happy 4TH!!!

For the fourth a group of us went to the Air Force Memorial to watch the fire works in DC. The weather was rainy and just crappy, but we stuck it out. In the end we got to see about 5 amazing fire works and then because of all the humidity a huge black smoke cloud formed in front of the fire works so you couldn't see them any longer, but they sounded cool. We all still had a great time together and would do it again!

An Afternoon In DC

Last Tuesday was Jareds last day off before he had to go back:( We decided to go into the District and go to the museums. I only lasted about 2 hours, but we still had a good time. After the museum we went to our favorite fountain to cool off.



Hartland Orchard

The day after we went to the zoo I was having another good morning, can't say much for the nights but I'll take what I can get, so we went to Hartland Orchard since the blueberries were on. It's a real working fruit orchard that they let the public come and pick what they want for less than half the price of what it costs in the stores. We gave the kids their baskets and told them to only pick the blue ones. I have to say that Lincoln was the best picker, he loved it! I told the kids to taste one and see what they thought, it was all over after that. The picking was done and the eating began! Fresh blueberries are the way to go for sure!





ZOO

Jared took the boards on the 23rd and then he was all ours. I am sooo glad to have him here. I have been so sick but I had a good half day on the 25th so we went to the DC Zoo! The kids were soooo excited to be out of the house and I have to say, so was I. We had so much fun!!
